This was our second trip to The Bison and it was just as phenomenal as our first experience two years ago! We absolutely loved the bison short rib and duck during our first visit but wanted to try something new this time. We thoroughly enjoyed the Caesar salad, steak frites and crispy fried chicken!! The flavors along with the textures and contrast was on point! We loved our server, Maria! Thanks for taking such good care of us! Lastly, all of the drinks we have tried (cocktails and wine) have been fantastic too. We will be sure to come back for round 3 the next time we visit Banff!

Fantastic restaurant with a wide array of tasty options and some great Banff-style variants on classic cocktails. Thoroughly enjoyed not only our entrees (Bison Tomahawk) but also the great appetizers and spirt-forward cocktails elevated the experience. Guillaume and Maria were fantastic in supporting a wonderful dinner and I would recommend the restaurant to anyone in the area. The menu cultivates a uniquely Alberta/Banff vibe and I will make a point of visiting again.

After a couple of visits to The Bison, I can say confidently that consistency is one of its biggest strengths. Each meal has been well executed, warm, and deeply satisfying. The space itself is inviting, with an open, relaxed feel and a layout that draws your attention to the centerpiece: an open kitchen built around a glowing hearth. It creates a sense of comfort and craft, the kind of atmosphere that makes you want to settle in and savor the evening. Service has been spot on every time—attentive, friendly, and polished without feeling formal. The menu is creative but stays true to its farm-to-table roots and its namesake focus on buffalo and bison. And honestly, that’s exactly what works. The dishes highlight the proteins beautifully without leaning on gimmicks or unnecessary flair. They’re thoughtfully composed, flavorful, and confident in their restraint. The Bison delivers honest, high-quality cooking in a space that feels both warm and elevated—a standout choice in Banff.
